Could the meteorite that formed the Hellas Basin on Mars have triggered the volcanic eruptions on the other side of the planet that created Olympus Mons?

It is possible for a large meteorite strike to trigger volcanic eruptions. However, the Hellas Basin’s location disproves any connection to the volcano Olympus Mons.
